Baking With Mari
Order now

The kit

Mari just got her first place. It has a kitchen and a stove in it and almost nothing else. She is building a real bakery out of that, from zero, on camera, and this page is the honest version of what that takes.

Two lists, side by side, for every part of the kitchen. What she is going after — the best of the best, the gear that gets bought once. And what she is using meanwhile, because bread has to come out of the oven this week either way.

If you want to help

Buy her one thing

Everything on this page is named exactly, with what it costs and who sells it. A $27 pan is a real gift to someone starting a business, and she will show you what came out of it.

Buy one for yourself

This is a genuinely good list — it is what a working kitchen actually uses. If you bake at all, the scale and the thermometer will change your results this weekend.

If you are one of these brands

She is filming the whole build from an empty kitchen forward, and she will be honest about what works. That is the offer. There is a note for you at the bottom of this page.

The mixer

The machine that decides how much she can bake in a day. A home stand mixer is rated for occasional use and burns its gearbox out on stiff bread dough; a gear-driven commercial machine is built to do this every day for twenty years.

What she is going after

Hobart Legacy+ HL200, 20 qt

$8,232.70 · Hobart · WebstaurantStore, checked 14 August 2026

The one every professional bakery in America already owns. Bought once, repaired forever, and worth money second-hand decades later. This is the top of the category and it is not close.

Hobart N50, 5 qt countertop

$4,459.70 · Hobart · WebstaurantStore, checked 14 August 2026

The same engineering shrunk to fit a domestic counter. The mixer serious small bakeries and pastry kitchens use where a floor model will not fit — which is exactly her situation for the next year.

Ecoline by Hobart EMM10, 10 qt

$1,299.00 · Hobart · WebstaurantStore, checked 14 August 2026

Hobart's own value line: the name and the service network at a fifth of the Legacy price, on a normal 120V outlet. The realistic ask if a sponsor says yes to one thing.

KitchenAid Commercial KSM8990, 8 qt

$999.99 · KitchenAid · WebstaurantStore, checked 14 August 2026

NSF-certified commercial line — not the domestic mixer with a badge. The brand most likely to say yes to a new baking channel, because that audience is precisely who they sell to.

What she is using meanwhile

MainStreet Equipment CMIX10, 10 qt

$599.00 · WebstaurantStore, checked 14 August 2026

Gear-driven, 10 quarts, 120V. Does the actual job today. Price shown is the site's paid-membership rate, so check the cart.

The blender

Nut butters, oat flour milled fresh, purées, batters, frozen work. A domestic blender stalls and overheats on the thick stuff, which is all of the stuff worth doing.

What she is going after

Vitamix 5202 XL, 4.2 hp

$1,823.60 · Vitamix · WebstaurantStore, checked 14 August 2026

The commercial XL — 1.5 gallon and a 64 oz container, 4.2 horsepower. The blender he named by hand, and the brand with the strongest creator-partnership history in this whole category.

Blendtec Stealth 885

$1,202.83 · Blendtec · WebstaurantStore, checked 14 August 2026

Vitamix's only real rival. Blunt blade instead of sharp, sound enclosure, programmable cycles — genuinely quieter, which matters enormously when she is filming in the room.

Waring MX1500XTX Xtreme, 3.5 hp

The third serious commercial name, with a programmable keypad and LCD. Smaller brand, which usually means a faster yes on a sponsorship than the two above.

Vitamix 62828 Drink Machine, 2.3 hp

Waring MX1000XTX Xtreme, 3.5 hp

$519.00 · WebstaurantStore, checked 14 August 2026

Full commercial horsepower with paddle switches instead of the programmable head.

The second oven

The single biggest thing standing between her and volume. Her house oven bakes one or two trays; everything below plugs into an ordinary wall socket and bakes three or four at once, evenly, with no electrician and no commercial building.

What she is going after

Moffat E22M3 Turbofan, half size

$1,550.00 · Moffat · WebstaurantStore, checked 14 August 2026

Avantco CO-16, 1.5 cu ft

Galaxy COE3H, 1.5 cu ft

$329.99 · WebstaurantStore, checked 14 August 2026

The same idea a few dollars cheaper.

Pans and tins

The gauge number is the whole story. Thin pans warp in a hot oven, buckle with a bang and tip the tray. Thirteen gauge does not, ever.

What she is going after

Vollrath Wear-Ever 5314 half sheet, 13 gauge, NSF

$27.40 · Vollrath · WebstaurantStore, checked 14 August 2026

Baker's Lane heavy-duty half sheet, 16 gauge

Still commercial, still aluminium, thinner. Perfectly good until the 13 gauge arrives.

Lodge pre-seasoned cast iron loaf pan

$19.90 · WebstaurantStore, checked 14 August 2026

Cast iron loaf pan. Heavy, cheap, lasts forever, and bakes a better crust than most tins twice the price.

The bench and the racks

This is the pair that turns a kitchen into a production kitchen. Ten trays cooling in the floor space of one, and a surface that can be sanitised and will not be ruined by a bench scraper.

What she is going after

Regency Spec Line work table, 30" x 72", 14 gauge

Regency 10 pan half-height rack, on casters

$79.64 · WebstaurantStore, checked 14 August 2026

Half height, ten trays, wheels out of the way when the kitchen has to be a kitchen again. This one is worth buying immediately at this price.

Choice footed wire cooling rack, 12" x 16½"

$5.49 · WebstaurantStore, checked 14 August 2026

Sits inside the half sheet pan. Bread cooling on a solid surface steams itself soggy underneath.

Proofing

Dough rises on temperature, not on the clock. A proofer is the difference between "it depends what the kitchen was doing today" and the same loaf every single time — which is the whole basis of selling.

Alto-Shaam 1200-S proofing cabinet

$3,311.22 · Alto-Shaam · WebstaurantStore, checked 14 August 2026

Cambro 6 qt clear round containers

Matfer Bourgeat 118505 willow banneton, 7½"

$42.00 · WebstaurantStore, checked 14 August 2026

French willow, the professional basket. Wicks moisture off the crust instead of holding it, and lasts decades.

Measuring, and the small tools

The cheapest section on the page and the one that changes the baking most. Weight repeats; cups do not.

What she is going after

AvaTek PC10 digital portion scale, 10 lb

Mercer M35525 bread lame

Cambro 22 qt round, clear polycarbonate

Packaging — what it leaves the house in

Bagcraft EcoCraft Dubl-Panel artisan bread bag, 8" x 3½" x 15"

$129.99 / 500 · Bagcraft · WebstaurantStore, checked 14 August 2026

Pots and pans

Custards, curds, caramel, glazes, melted butter, poaching liquid, the syrup for a brioche. Thin aluminium scorches sugar in seconds because heat arrives at one spot; a clad or tri-ply base spreads it, so the pan stops burning things while her back is turned.

What she is going after

Vigor SS3 tri-ply stainless sauce pan, 3.5 qt, with cover

$53.99 · Vigor · WebstaurantStore, checked 14 August 2026

Tri-ply means aluminium sandwiched all the way up the wall, not just a disc on the bottom. This is the pan for caramel and custard — the two things that punish a cheap pan hardest.

Vigor SS1 stainless sauce pan, 7.6 qt

The larger sibling. Two of these cover almost every wet job in a bakery.

Choice tapered aluminium sauce pan, 2.75 qt

$11.04 · WebstaurantStore, checked 14 August 2026

Eleven dollars. Aluminium, so watch it with sugar — but for melting butter and warming milk it is all anyone needs.

The food processor

Not the same machine as the mixer and not a luxury beside it. The mixer stretches and develops; the processor cuts. Cold butter into flour in ten seconds is how laminated pastry, scones and pie dough get made without warming the butter with her hands — and warm butter is why home pastry fails.

Robot Coupe R2BCLR, 3 qt clear bowl, 1 hp, 120V

$1,395.00 · Robot Coupe · WebstaurantStore, checked 14 August 2026

AvaMix Revolution BFP34CL, 3 qt clear bowl, 1 hp

One horsepower and a clear bowl at a third of the Robot Coupe price.

Refrigeration

The one nobody plans for, and the one that decides whether she can work ahead. Cold dough is the whole trick: laminated pastry, overnight ferments, cookie dough that slices clean. Her house fridge holds food, not trays — a half sheet pan does not fit in a domestic fridge, and that single fact caps how much she can prepare the night before. Everything below is 115V and plugs into a wall.

Printed labels

A label is not decoration — in Missouri a cottage-food product has to carry the baker’s name, address, the ingredients and an allergen statement, and it is the label that makes what she sells legal. It is also the only thing in the box with her name on it. Get it right once and it prints for years.

What she is going after

Custom printed labels on rolls

no price shown · OnlineLabels · onlinelabels.com, checked 14 August 2026

NO PRICE COULD BE READ. Their custom-label page gives no figure at all — it says "Configure & Get Pricing", so every quote depends on size, quantity and material. That is normal for custom print and it is why no number is invented here. She sends her artwork and gets a quote back.

Print at home on blank sheet labels

· —, checked 14 August 2026

THIS ONE IS DELIBERATELY UNPRICED. A home printer and a pack of blank sheet labels is what almost every cottage baker starts on, and it is completely legitimate — but the cost depends on her printer and her ink, so no figure is printed here rather than a guessed one. The legal content of the label matters far more than what printed it.

The camera kit

The whole point of doing this in public. And the honest answer is that the camera matters least — she almost certainly already owns one. Sound and light are what make a video watchable, and they are the two things people spend nothing on. Fix those two first, in that order.

Neewer NL480 bi-colour LED panel

$99.99 · Neewer · neewer.com, checked 14 August 2026

Half the Elgato, and bi-colour so it can be warmed to match the kitchen bulbs instead of fighting them. Neewer also sell a two-pack of these for $199.99, which is the real answer — one light makes hard shadows.

Neewer BASICS TP014 overhead tripod, 76"

$89.99 · Neewer · neewer.com, checked 14 August 2026

THE OVERHEAD ARM IS THE BAKING SHOT. Kneading, folding, scoring, piping — all of it reads from directly above and from nowhere else. A normal tripod cannot get over a bench; this one has a horizontal arm that can.

RØDE Wireless Micro

price not confirmed · RØDE · rode.com, checked 14 August 2026

The obvious rival to the DJI and a company worth writing to. RØDE’S OWN PRODUCT PAGE SHOWS NO PRICE at all on 14 August 2026, and the retailers that would have shown one refused us (see below). Check it before quoting it.

What she is using meanwhile

The phone she already owns

$0 · —, checked 14 August 2026

Genuinely. A recent phone shoots better video than a $2,000 camera did five years ago, and it is already in her hand. Buy the microphone and the light with the money instead — that is the actual upgrade.

Apple iPhone 17, 256 GB unlocked

$829.00 · apple.com, checked 14 August 2026

If the phone does need replacing, this is what it costs, read off Apple’s own store. The 17e starts at $599. The camera is not the bottleneck — this row exists so the number is known, not so it gets bought.

Neewer BASICS TP12 aluminium tripod, 66.5"

$49.99 · neewer.com, checked 14 August 2026

A tripod at all beats no tripod. Handheld footage of a bench is unwatchable.

Neewer FS60B LED light

$99.99 · neewer.com, checked 14 August 2026

A hundred dollars of light is worth more than a thousand dollars of camera. This is the cheapest change that makes the videos look professional.

And the one she actually dreams about

Rofco B40 electric stone oven

Three thick fire-brick shelves, about 26 lb of dough per bake, 187 lb of oven, no venting and no smoke. It runs on 230V single phase — which is an ordinary American 240V circuit, the same kind an electric dryer uses. This is the cult oven of home and micro bakeries worldwide, and it is the one that makes a house into a bakery.

Price not confirmed. Its US retailer would not serve us its page on 14 August 2026. Second-hand units were listed publicly between $2,500 and $4,000. Anyone quoting it should check first — we will not print a number we did not read.

Why it is on the list at all

Her current place is temporary — six months to a year, then somewhere bigger. Every single thing on this page is chosen to move house with her: countertop, plug-in, 120V, nothing built in, nothing that needs a contractor. The Rofco is the one piece bought for the kitchen after this one.

If you make one of these

Mari is a nurse in south-west Missouri who is learning to bake at a professional standard, from an empty kitchen, with the whole thing filmed from day one. Not a finished baker demonstrating gear she was given — someone learning it in public, on camera, and saying plainly what worked and what did not.

If your product is on this page it is because it is genuinely the best answer in its category, researched before anyone was contacted. If you would like it to be the one she learns on, she would like to hear from you.

Not on this page yet, and why

This list is honest about its own holes. Nothing gets added here until a real price has been read off a real seller’s page — so where a seller would not let us read one, that is printed instead of a guess.

Sellers that refused us

All four were tried for the camera kit on 14 August 2026. This is why several rows above say the price is not confirmed, and it is deliberate: a figure from a search-results summary is not a price read off a seller’s page, and we will not print one as if it were.

Three more, found earlier and still true: Pleasant Hill Grain (403, which is why the Rofco below has no price), ThermoWorks (its own product page would not render its price), and WebstaurantStore, which hides many Vollrath prices behind a paid membership login — every membership rate on this page is labelled as one.

Still genuinely not researched

Every price on this page was read off the named seller’s own page on 14 August 2026. Prices move. Where a figure is a paid-membership rate or could not be confirmed, it says so on the card rather than quietly rounding it off.

Or just buy something she baked

Which is, honestly, the fastest way to get any of this bought.
